A WHOLE ASS CHicken
Ingredients:
A whole chicken
A ‘lil Oil or butter
Whatever spice you want, it just goes on the skin anyway lol (Please, at least salt and pepper. And probably a little more than you think.)
Directions:
Oven to 425 F
Make sure there is nothing hanging out inside the chicken (Giblets, often in a plastic bag, save for gravy or just throw away, or cook and eat like a psycho. idc.) You will have to put your whole hand inside that bird. It’s already dead, don’t be shy. We are far too removed from our food.
Pour a lil oil on there or rub a little butter, add your spices on and keep rubbing.
Flip it over and do it again.
Cook it for 15-20min per pound of bird. Temp it. 165 F or it goes back in.
If you’re like me, you can cook it upside down because you aren’t paying attention. It will still cook just fine, but you won’t have the same crispy skin if that is your thing.

Bonus: Cut as much meat off as you can, save in a container. Save the bones, the skin, the giblets, etc. Throw it in a pot, cover with water, salt to shit, and simmer for ever (like 2 hrs is usually good, but do you) then strain it out and you have some dank bone broth. I put mine in a jar and then freeze it for other recipes that call for broth. And sometimes I buy broth at the store like a regular 28 year old.
